Wi-Fi on a retro handheld is useful for two things: online netplay with friends and automatically downloading box art and game data. If neither appeals to you, you can save money with a model that leaves it out.

What Wi-Fi unlocks

With Wi-Fi you can join netplay sessions, scrape artwork to make your library look polished, and in some cases pull firmware updates over the air instead of via card.

When you can skip it

For pure solo play, Wi-Fi adds little. Many excellent handhelds omit it to keep the price and battery drain down. Decide based on whether you want online or automated artwork.
